This Friday, I went to see a concert of Nancy Vieira in Het Zuiderpershuis. This Capeverdian singer really took us on a travel through the world. Cabo Verde, Portugal, Moçambique, Angola, Brasil and Cuba! She had some really great artists with her on stage from Portugal, Brasil, Peru and Cabo Verde. Great evening out in the city, made me start travelling right away. Next destination, Cabo Verde?

Nancy Vieira

With thanks to the owners of restaurant Cabo Verde for introducing us this great music. I’m becoming a real lusophile.

The next weekend is already standing at the front door, but before I’ll open I’ll just make time to say something about last weekend. It was too full, I could write such a long post you’re finger will be tired of scrolling down. So I decided to summarize my weekend in some lists.

Let’s try doing better coming weekend!

Toon and me have really found eachother in the kitchen, or that is what our housemate Jan keeps saying. Well I cannot blame him for thinking so. Here is the menu of the last few days.

Friday

Well, not really our merit, but still a good evening dinner. Because Wouter is back in the country for two weeks we all went to Cabo Verde, a Capeverdian restaurant at Het Eilandje, in Antwerp, where we are starting to get good customers. The lovely owner even invited me in for coffee the day after when I went back to fetch my bike, left all alone on a fridaynight with a flat tyre. Good practising my portuguese that way. My choice: Capeverdian Meat, a mixture of potatoes, meat, scampi, clams and some vegetables and the usual amount of garlic. Hmmm, so good! And what a great atmosphere.

Saturday

Peas with a thick slice of bacon and two eggs sunny side up

Coq au vin and a nice bottle of Roussillon wine Toon had bought during our cooking trip with the girlscouts this summer in Catalunya. Finished the dinner of with some real good Crème brulée, not thick enough though. We keep on improving this recipe during the way.

What was also planned, but did not make it because we did not get the dough ready on time : real Portuguese Pasteís de Nata. We’ll try making that soon enough though. Seems to require some practice, so we’ll update you when we’re ready.

Sunday

Prego sandwiches. A typical Portuguese style sandwich with a thin slice of premium beef, a good amount of garlic and a sauce of the marinade the meat was marinated in. Topped with a nice tot of Piri Piri sauce. We had some bone on the meat as well, so we already grilled that for the little hunger feeling we had. Cycling race, and meat on a sunday afternoon! Very manly. Maybe we needed to do this for ourselves before everybody starts thinking the title of this post should not be Kitchen princes but Kitchen princesses.

Spaghetti Carbonara. After enjoying the last evening sun, with a book and some coffee, on the Dageraadplaats, I came home, quickly roused through the fridge and the kitchen cupboards and made this spaghetti as I read it was supposed to be. Or almost like it supposed to be. Pancetta is not really something I always keep in the fridge, but there was some bacon. So fried some bacon with some garlic, poured in a glas of wine while boiling my pasta al dente. Afterwards just threw the pasta into the frying pan with the sauce, and added two egg yolks. Took it off the fire, quickly stirred everything together with some freshly grated Grana Padano cheese, and ate it with a big smile watching Sportweekend on TV. So, no cream added at all. Makes it too heavy. But I’ll have to try it anyway, just to see for myself what I like to most. But I guess the way I did it was just as perfect for me as it could be.

Well, the weekend was over, but Peter, Toon, Jan and me had some plans to have dinner together on monday. Not something that happens a lot with all these different working hours. So let’s add one more day to this post.

Monday

Scampi with beer. A recipe from my Portuguese cooking book, Toon and me already tried out once with Duvel, but today Toon poured in some Blonde Achel. The rest of the recipe? Scampi’s, garlic (lots of it), some butter and some piri piri. Nothing more, nothing less, but oh so good.

Spaghetti alla Godfather. As seen in the movie. Spaghetti with a tomatosauce with minced meat balls, italian sausage, and lots of red wine. Very sweet dish. Just a lovely offer you can’t refuse.

Sabayon. All my respects to Peter, who dared to go for making Sabayon as dessert. Egg yolks, sugar and Marsala wine. Some vanilla ice in a big whine glass, pouring it over with the sabayon. Oow, so good!

Wordt T&T-fan!
